Getting the chemistry right

I am lucky enough to have acquired a damson, a yellow plum, and two fig trees along with my garden, which every year provide me with bucket loads of fruit for no effort on my part except walking down the hill to pick them. However, fruit being by nature somewhat perishable, I do then have to work out what to do with it all.
